The past couple of CSA crates have included Zone Beets.

I’m pretty new to beets in general, and had never heard of this variety, so I googled.  And found not a thing.

The CSA email advised “if you boil them, then shock them in ice water, they taste like candy!”

So I figured I’d give it a go this morning.


A little pinker than the average beet, but otherwise nothing remarkable.  Until you cut the top and bottoms off…



Then I cut them into small wedges.


And tossed them into the boiling water.


About 10 minutes later, they were fork-tender, so I pulled them out and dropped them into the ice water.


The water had turned a little pink, and the beets were definitely paler.


Once they were completely cooled, we each tried a piece.

I wouldn’t go so far as to say it tastes like candy, but they’re definitely very sweet – almost carroty.
